Glutamal Bioactive is a modification of food grade phosphates, pH reducing carbohydrates, and a micro capsulated vitamin complex in a free flowing powder.
The effectiveness of Glutamal® Bioactive was proved in many scientific laboratory and field tests under economically relevant conditions in different countries. The increase in the shelf-life of poultry carcasses after applying Glutamal® Bioactive was achieved by a reduction in the bacterial count by several multiples of ten. At the same time the high quality expected by the consumer was achieved. In the case of poultry example, the gustative properties were significantly improved by an increase in the browning and frying properties.
With the treatment of Glutamal® Bioactive, in case of a proven salmonella content a dramatic reduction of salmonella takes place. Glutamal® Bioactive has been successfully applied to chicken, lamb, cattle and pig carcasses using the dipping and the surface spraying method. These treatments lead to a distinct improvement in the microbiological hygienic and sensory quality. It is now to be examined whether a similar improvement in quality and preservation life can be achieved in minced meat as well.
Special interest was placed on the question if Glutamal® Bioactive could be used directly in minced meat to produce patties for hamburgers and the like.
To answer this question, tests were made and concluded that the treatment with Glutamal® Bioactive clearly improved the microbiological quality and the shelf-life of minced beef. It was shown that Glutamal bioactive® could not only be used for spray treatment as surface-active substance but also as additive to minced meat. The contamination with Salmonella and Listeria as important pathogen germs in food was reduced clearly respectively eliminated totally.
