Unique color improver for processing ham
SCHINKENCOLOR
is a specific
antioxidants with a micro-coated
vitamin-complex at a neutral pH-basis.
Our worldwide experience
at the field of ham producing has been the
background of the development of this
neutral special antioxidants.
SCHINKENCOLOR
has been developed
during many years of testing by Stemmler
Research, and is an
excellent co-additive for the phosphate
blend GLUTAMAL SV or Super 88 in ham
production. The slices of the finished ham
show the fresh natural color the consumer is
expecting.
Recommended Quantity:
2 - 3 g
per kg of meat mix
Application:
3 g of SCHINKENCOLOR
are dissolved together with 4 g
GLUTAMAL SV or Super 88 or any
another phosphate in approx. 15 l tap water
whilst stirring well.
A few minutes after
stirring the solution will be clear and is
then mixed into approx. 85 l of injection
brine.
Thereafter proceed as usual. |
